Chef Tiago Silva and Chef Constança Mourão

Tiago Silva & Constança Mourão | 28 & 22 yo | from Lisbon
Chef Tiago Silva studied cookery at the Escola Profissional de Hotelaria e Turismo de Lisboa and later at the Escola de Hotelaria e Turismo de Portalegre.
He worked at the Maria Pia Restaurant in Cascais, from where he leaped to open the Iberostar Lisboa Hotel, where he got to know Chef Jorge.
Since 2019 he has been part of the Culinary Competition Team, having won 1 Silver Medal and 1 Bronze Medal at the 2020 Culinary Olympics, as a member of the Junior Team.
In 2020 he decided to leave the capital and take up the challenge at one of the best hotels in Portugal, the Sublime Comporta, where he met his better half Constança Mourão.
Taking advantage of Sublime's partnership with the Grade La Margna St Moritz Hotel in the Swiss Alps, he decided to go for the 2023/2024 winter season to continue filling his CV with new experiences. In 2024, returns to his starting point in Comporta, where he is currently working as Junior Assistant Chef.
Chef Constança Mourão studied cookery at the Agostinho Roseta Association and later at the Lisbon Hotel and Tourism School.
She did an internship at the InterContinental Lisboa Hotel, then at the 1300 Taberna Restaurant at the LX Factory and, finally, an internship at the Hotel Sublime Comporta, where she was invited to stay on.
2023 was a challenging year, as she was in charge of the hotel's pastry department for many months and in November she decided to deepen her knowledge and do an internship in Malaysia, Kuala Lumpur.
After her internship, she flew to Switzerland, to the Hotel Grace Margna St Moritz, where she spent the winter season 23/24. She returns to the Hotel Sublime in Comporta for the summer high season.
Constança will be responsible for the desserts and Tiago for the savouries.
