Sérgio Carola . 32 yo. From Freixo, Évora
At the age of 16 he decided to take a cookery course at the "Escola Profissional da Região do Alentejo" in Évora, where he did an apprenticeship at the Hotel Aqualuz Troia Resort.
After his apprenticeship, he moved to the Lisbon area, where he joined the Pestana Pousada da Cidadela Hotel in Cascais, where he stayed for four years, playing a key role in his training as a chef.
In 2016, he decided to change jobs, and the challenge was the new InterContinental Hotel in Estoril, led by Chef Jorge Fernandes, where they got to know each other for about a year and a half, at which point he decided to move to the capital, again challenged by his former chef, to be part of the opening team at the Iberostar Lisboa Hotel.
The following year he was given the opportunity to take on his first managerial position as sous-chef at the Reserva da Villa restaurant in Cascais.
At the end of the year, he joined the iconic Lisbon restaurant, JNCQUOI, as Assistant Chef, where he stayed for four years. In 2023, he had his first experience as Executive Chef, now at the Aethos Hotel in Ericeira.
He has now opened the "Non Basta" group's new restaurant in Paço de Arcos, Restaurante Madrasta, and it is here that you can find him around the cooker every day.
