Coming from a family with a strong history in the Minho restaurant industry, Carlos entered the Escola de Hotelaria e Turismo do Porto in 2008, where he stayed for a year and a half until completing his basic training.

In 2009 he went down to the capital, more precisely to Oeiras, to work at Rio's Restaurant, led by the charismatic Chef António Bóia, where he also met Chef Jorge Fernandes, who was the Chef's right-hand man.

In 2010 he decided to continue his studies to prepare for the future, so he went to Universidade Portucalense to study Hotel Management.

During his time at university, he worked with his family and organised gastronomic fairs around Portugal.

In 2015 she opened her first restaurant with her brother, Élebê Centro, in Porto. In the same year they opened their second restaurant, Élebê Póvoa do Varzim.

The venues were a success and they felt the need to add another restaurant to their portfolio, which was joined by Élebê Baixa, which his brother had opened with his father in 2013. So in 2018, Élebê Entreparedes was born and there were four restaurants under his leadership.

In 2019, the Training School was born along with the catering and consultancy company, called Étop! Consultancy & Training.
